At the Austin Farmers Market, our lemon-curd layer cakes were so popular that we adapted the recipe for our second dessert - English Lemon Pudding. Moist butter sponge is baked in our little pudding basins on top of our home-made lemon curd sauce.
The sauce is made with freshly squeezed lemon juice from our neighbors at the Good Flow Juice and Honey Company and cooked slowly over a double boiler with fresh eggs and butter to thicken. Fresh lemon zest is added as the final touch. The tart lemony sauce balances well with the sweet butter sponge cake. We recommend serving warm or at room temperature with cream or ice-cream and seasonal berries. |
